Challenging to craft, yet delightful to sip, clarete is the oft-misunderstood gem of Spanish viticulture. A rosé made from both red and white grapes in proportions that suit the vintner's fancy, it was shunned in the 1990s as an untamed outlier. Fortunately, what was once deemed the common folk's refreshment is now enjoying a resurgence, championed by avant-garde vintners who advocate a return to traditional methods. Among them, María, Fer, and Dani—the dynamic trio behind the Navarre winery Azul y Garanza—proudly promote this indigenous rosé with Azul y Garanza Naturaleza Salvaje Clarete, a rosé crafted in the old-fashioned way, whose charm lies in its uninhibited, natural style.
This team of daring young vintners, based in what was once the Carcastillo cooperative building in Navarra, is unequivocally committed to minimal intervention. While today this approach is a common trend and may seem straightforward, it is anything but—especially when the vineyards lie in the heart of Europe's largest desert, the Bardenas Reales of Navarra, a UNESCO Biosphere Reserve since 2000. This landscape boasts a unique beauty with its singular geological formations and extreme climatic conditions (days above 40°C, nights dipping to –5°C), which simultaneously endow the vines with distinctive organoleptic qualities. From this terroir comes Azul y Garanza Naturaleza Salvaje Clarete, a wine made from garnacha tinta and garnacha blanca grapes, from 40-year-old vines planted on calcareous clay soil at an altitude of 550 meters. Cultivated using ecological principles and regenerative agriculture, the grapes are handpicked and then vinified as a red wine, allowing fermentation and maceration with the skins for 12 days. Subsequently, the wine matures for 6 months in amphorae before bottling.
