The Clouet family has been making champagne for over 200 years, vinifying the grapes from the vineyards they received from Napoleon in gratitude for the work they did for many years as the king’s scribes.
Maison Clouet has 9 hectares of vineyards with different plots in the village of Bouzy, all of them classified as Grand Cru and cultivated organically.
Tradition and the ‘savoir faire’ of a winery with as much history as André Clouet, imprint their style in al their fabulous champagnes.
André Clouet Dream Vintage Grand Cru is a champagne made with Chardonnay from their own vineyards planted on clayey-calcareous soils.
Harvesting is carried out manually, selecting the grapes in the vineyard. Once they arrive at the winery, and once they are pressed, the grapes ferment in small stainless steel vats at a controlled temperature between 16ºC and 18ºC. Once the malolactic fermentation in these same vats has ended, the champagne aged in bottles for a minimum of 4 years with their lees, before the manual disgorgement.
André Clouet Dream Vintage Grand Cru is a mature, balanced and honest champagne. On the nose, aromas of ripe white fruit stand out, with citrus notes and light mineral touches. In the mouth, it is ample, with good bubbles and a long, dry finish.
