Les Vignes de Bila-Haut L'esquerda is a red wine coupage of Syrah, Grenache and Cariñena. It is produced by Michel Chapoutier and belongs to Côtes du Roussillon-Villages.
Michele Chapoutier cultivates his vineyards with great respect for the balances, and natural and territorial cycles. The winery was founded in 1808 and has been a precursor in introducing biodynamic cultivation in Burgundy.
The grapes for Les Vignes de Bila-Haut L'esquerda come from vineyards located 350 metres above sea level on plains with gentle slopes and granitic soils. The climate in the area is Mediterranean with a continental influence.
Once in the winery, the Les Vignes de Bila-Haut L'esquerda harvest is destemmed and vatted, and then macerates for 4 weeks. The aromas and colour are extracted by pumping the must over periodically. The fermentation temperature does not exceed 32 ºC. Lastly, 10% of the wine is aged in French oak barrels and the rest remains in stainless steel tanks.
