Lagar de Cervera Albariño is a white wine from D.O Rías Baixas produced by the winery Lagar de Fornelos, from the group La Rioja Alta. This wine is a monovarietal from the grape Albariño.

The grapes originate from a tiny selection of vineyards in Viña Cevera, in O Rosal.

The harvest is completed by hand, then the bunches of grapes are transported in refrigerated vehicles to the winery in small containers.

The selected grapes, after being destemmed, are gently pressed at 10ºC.

Once it has been decanted, the must is alcoholically fermented at a controlled 15ºC.

50% of Lagar de Cervera Albariño, in the harvest of 2014 was especially acidic, it was fermented (malolactic) in containers.

After the first racking, Lagar de Cervera de Albariño received regular pump overs.

The group La Rioja Alta was looking for the best vineyards to produce the best possible white wine and they eventually found it in the heart of Rías Baixas.

This project started in 1988, 25 years later, lagar de Cervera is considered to be a yardstick for other quality wines.

The La Rioja Alta Group was in search of excellence in white wines and they found it on the Atlantic shores, in the heart of Rías Baixas, located in a privileged microclimate and with a grape variety of an extraordinary quality: the Albariño. Today, 25 years after they arrive to Galicia, Lagar de Cervera has completely been reshaped. It is equipped with the most modern, meticulous techniques there are right now, which allows them to achieve their main goal: produce the best Lagar de Cervera albariño wine possible, harvest after harvest.
Rías Baixas wines would not be where they are today without the native Albariño grape variety. Although red wines are also produced in Rías Baixas, practically 100% of Rías Baixas wines are white. Among them, the vast majority of them are made with the Albariño grape. As well as young wines, fresh and aromatic, the region also makes wines aged in the barrels, complex wines with great personalities. Albariño wines can either be single varieties, or be part of a blend with other characteristic grapes of the region: Treixadura, Loureira Blanca and Godello.
