Convento de San Francisco is a red wine from D.O Ribera del Duero produced by the winery with the same name, Convento de San Francisco.
This winery is founded on the remains of an old convent, San Francisco de Peñafiel from the 8th century, located in Peñafiel (Valldolid).
Convento de San Francisco is 100% produced from Tinta del País (Tempranillo). The vines are 25 to 100 years of ages, located between 760 and 970 meters above sea level. Planted in sandy, clay and chalk soils.
The harvest is completed by hand and the grapes are transported to the wineryin small containers of 15 kg capacity, where the grapes will be processed again for a second selection on the table. This is to ensure maximum quality control of the grape.
The grapes are fermented in 25,000 kg stainless steel containers. Convento de San Francisco is then aged for 12 months in 225 litre American (30%) and French (70%) oak barrels.
