Château Dassault is a coupage red wine of the Merlot, Cabernet Franc and Cabernet Sauvignon varieties, produced by Château Dassault under the AOC Saint-Émilion Grand Cru in Bordeaux, France.
The Château Dassault wine comes from the Grand Cru Classé vineyard located on the north slope in Saint-Émilion, which has around 20 hectares settled on siliceous and sandy calcareous soils which contain iron deposits, where winemaking is carried out carefully throughout the year to obtain the precious reward of harvesting healthy bunches in a perfect state of maturation. These vines have an average age of 25 years and their grapes are harvested manually with selection from the vineyard and upon arrival at the winery, they ferment in small concrete tanks with internal temperature control.
Seventy percent of the resulting wine ages in new barrels and the rest does so in one-year-old barrels for a time ranging from 14 to 18 months, depending on the vintage and the plot.
Marcel Dassault acquired the property in 1955 and since then he hasn’t stopped in his pursuit of excellence, uniting tradition and progress. Since 1994, it’s his grandson Laurent Dassault who runs the Château, which today is one of the largest vineyard properties in Saint-Émilion.
