About As Covas

As Covas is a monovarietal Pinot Noir red wine produced by Bodegas y Viñedos Rodrigo Méndez in collaboration with Raúl Pérez.

Bodegas y Viñedos Rodrigo Méndez is a small family winery owned by the winemaker Rodrigo Méndez. He has collaborated on several projects with the famous winegrower Raúl Pérez, with whom he has developed the well-known Goliardo.

As Covas is the result of a Pinot Noir of Atlantic expression planted in espalier on a granite soil. The grapes have been fermented in an open vat and have undergone 11 months’ ageing in used barrels to refine the wine, although at the same time the new wood does not detract from the wine’s personality. Only 800 bottles of this unique wine are produced.
2020

As Covas 2020 is an exquisitely elegant red wine. Exhibiting a deep cherry hue, the bouquet emanates a mineral essence intermingled with scents of ripe red fruits. Upon tasting, it reveals complexity and depth. Harmonious and well-balanced, it features a pronounced presence of red berries. Exceptionally well-structured acidity.
2017 As Covas 2017 has aromas of red fruit over a mineral base note. On the palate it is friendly and balanced, with fresh red fruit.
