Payoya Negra is a red wine from D.O Sierra de Málaga produced by Finca La Melonera.
The winery is located in Serranía de Ronda, a region in the heart of the province of Málaga with viticulture tradition dating back more 3,000 years, like trades with the Phoenicians.
The objective of Finca La Melonera is to recuperate their winemaking traditions of old, using the grape varietals that are on the edge of extinction in the region.
Payora Negra is produced from the varieties Syrah (60%), and the native grape Tintilla de rota (20%) and Cabernet Sauvignon (20%).
The grape originates from their own plots of land located at 600 to 900 meters above sea level.
The methods of cultivation are purely organic, no pesticides or herbicides are used, they use Arab tiles to aid water retention, which has no adverse effect on the environment.
The harvest is completed by hand, and transported to the winery in small 7kg baskets.
For production, Payoya Negra is macerated and fermented at 25ºC and aged for 12 months in 225 litre French oak barrels from Allier.
The name and label refer to a native breed of goat that produces exquisite goat's cheese.

Payoya Negra 2018 is an eloquent red wine boasting scents of dark fruit, spiced undertones, and herbaceous hints. On the palate, it is succulent, silky, and harmoniously integrated. This wine features mature tannins and an extensive, lingering finish.
Garnet red with purple reflections.
Intense red and black fruit aromas combined with fresh herbal notes, Oak and toasted tones are well-integrated.
It boasts a deep cherry hue with a purplish rim, vibrant and lustrous.
The bouquet is redolent with fresh red and black fruits, intermingled with wild herbs. There are also well-integrated spicy undertones of oak.
