About Venta Las Vacas
The team at Uvas Felices is omnipresent, including within the prestigious D.O. Ribera del Duero. There, their accomplice, the esteemed oenologist Juan Carlos Vizcarra, collaborates with them to create the distinguished Venta Las Vacas.
Crafted exclusively from the tinto fino grape variety grown in Burgos, within the village of Mambrilla de Castrejón, the vineyards Tras de San Pedro, Las Arras, Valcabero, and Los Valles are all situated at an elevation of approximately 850 meters. The calcareous and sandy soils provide an ideal environment to nurture the venerable vines, aged over 25 years, which are the very essence of this region. The meticulous hand-tending and selective harvesting are merely the culmination of tireless effort that continues until October 12th, when the clusters are gathered. Subsequently, Venta Las Vacas undergoes destemming and is allowed to cold macerate for around four days. Thereafter, Venta Las Vacas is transferred to semi-open stainless steel fermentation tanks. The next phase occurs in French and American oak barrels, where Venta Las Vacas undergoes malolactic fermentation and matures in contact with its fine lees for approximately 12 months, during which only two rackings will take place.
