About Tesalia Tinto

Perhaps the names Andalucía and Cádiz resonate with you due to their renowned fortified wines. You might even be familiar with their white wines, where the palomino grape reigns supreme. But have you been equally acquainted with their red wines? If not, take note of this one: Tesalia Tinto.

From the heart of the Sierra de Grazalema, in the village of Arcos de la Frontera, the Golding family extracts this mineral-rich, robust, and exquisitely flavorful wine born from the clay soils prevalent in this area, situated between the Campiña Jerezana and the Sierra de Cádiz. This particular soil type, which is infertile with a subsoil of chalk, is quite rare in the region. However, this English family has recognized it as the perfect foundation for vine cultivation. Indeed, this soil is highly advantageous given its ability to retain water in an area where summer temperatures can soar to 35°C. With the knowledge of the treasure they held, the Goldings expanded their initial equine breeding project to include the creation of Tesalia Tinto.

The true beauty of Tesalia Tinto lies in its viticulture and production process, a stark departure from the centuries-old practices in the region: high trellising systems (so that the vine's shade protects the grape clusters from the sun), state-of-the-art wineries with impeccably clean facilities (a far cry from the poetic cobwebs and albero soil floors typical of cathedral-like cellars), and wines with lower alcohol content (a contrast to the minimum 15% alcohol content required for fortified wines).

The production of Tesalia Tinto begins with a period of rest. After the night harvest (to avoid the peak sun hours), it is crucial to cool the grape clusters. To achieve this, the harvest is transferred to refrigeration tanks, where it is kept for several hours at 5°C. Once cooled, the clusters of Tesalia Tinto undergo a rigorous double sorting process on a selection table, ensuring that any damaged bunches and underripe berries are discarded. This meticulous scrutiny guarantees that only the finest clusters proceed to the next stage (the destemmer).

For 12 days, Tesalia Tinto undergoes fermentation, at the mercy of yeasts that convert sugars into ethanol. During this process, which also releases CO₂ and heat, the temperature must be constantly monitored until the yeasts have completed their task. Finally, Tesalia Tinto is racked and transferred to the aging room, where it will mature for six to 12 months in medium-grain French oak barrels, allowing for a slight ingress of oxygen.

Each bottle of Tesalia is a unique gem, as all the varieties are processed separately, with varying methods and durations depending on the wine and the vintage. A truly distinctive and authentic wine through and through.

2019

Tesalia Tinto 2019 is a juicy red wine, with a cherry red colour, violet hues and a very high depth. The nose is complex, with notes of black fruit that open up to aromas typical of barrel aging like tobacco, cedar, spices and a mineral touch. The palate is savoury and dense, very meaty, with fine tannins. Very elegant. Long and very pleasant finish.
