About Les Cousins Sagesse
Les Cousins Sagesse is a red wine from D.O. Priorat produced by Les Cousins Marc & Adrià. This wine is a coupage of Carignan (55%) and Red Grenache (45%).
The harvest of the grapes used by Les Cousins Sagesse is carried out manually. They use 12-kg boxes to take the grapes to the winery, where they go through a selection table.
Then, the grapes are destemmed and transferred to stainless steel vats. Here, along with the selected yeasts, the first fermentation process takes place.
The must for Les Cousins Sagesse goes through several short macerations that last for 15 to 20 days before it is pressed and aged.
After been pressed, Les Cousins Sagesse rests in used and new 225-litre French oak barrels – for the Carignan – and in used 400-litre French oak barrels – for the Grenache – for a period of 16 months.
Lastly, they carry out the coupage of the two varieties. The wine they obtain is left to rest for two or three more months in stainless steel deposits.
