About Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG

In 1957 Francesco Giuntini took over Fattoria Selvapiana. Francesco Giuntini saw great potential very early on in this property, which has its roots in the Middle Ages (when it was a summer destination for bishops and the Florentine aristocracy). The potential he saw was the production of a single-variety Sangiovese wine (a grape typical of this area of central Italy) from a single vineyard. And so Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG was born. 
 
Only made in the best vintages, Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG is the house’s flagship wine grown entirely in the Bucerchiale vineyard. This plot, rich in clay and calcareous soils, is located in the hills of the DOCG Chianti Rufina Riserva, at the foot of the Apennines, between 200 and 350 metres above sea level. This area spreads over several hectares, mostly made up of vines of different ages (between 16 and 40 years old). All of them are manually cultivated and oriented towards the north, growing under a cold microclimate and moderate temperatures, which extract the variety’s freshest profile. 
 
Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG is brought to the winery, processed and directly vatted in stainless steel tanks where it will begin to ferment spontaneously. This allows the native yeasts to start their work when they want to, keeping going until the must has become wine. At this point, Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG is left to macerate in contact with the skins, to extract all the aromas, colour and flavour possible. This step will be key just before aging, when Fattoria Selvapiana Vigneto Bucerchiale Chianti Rufina Riserva DOCG is transferred to French oak barrels where it will remain for about ten months.
