About Cava d'Onice Sensis Brunello di Montalcino

Simone Nannetti harboured a dream, and by adhering to what she herself calls her "vinosofía", she achieved it. This coined term, blending "wine" and "philosophy", refers to the art and science of enjoying wine, as well as reflecting on the cultural, historical, social, and sensory aspects it encompasses. A profound approach to wine that she applied when crafting her first wine in 2005 while working at Conti Constanti, and which, by maintaining this work philosophy, has enabled her to establish her own winery, Cava d'Onice. This project now spans four hectares consisting of four vineyards and has swiftly become one of the leading wineries of Brunello di Montalcino in Tuscany, Italy.

A testament to her expertise, Cava d'Onice Sensis Brunello di Montalcino is a red wine made from the indigenous sangiovese variety, traditionally cultivated and hand-harvested once the grapes reach their optimal ripeness. In the winery, the selected and destemmed grapes are gently pressed to initiate fermentation in cement and stainless steel tanks for 10 days. The maceration lasts between 3 to 4 weeks, after which the wine matures in 25-35HL Slavonian and French oak barrels for 3 years. Finally, it is bottled and left to refine for 12 months before being released to the market.

Thus, with a wine like Cava d'Onice Sensis Brunello di Montalcino, Simone Nannetti has demonstrated that "vinosofía" is not merely an abstract concept, but a practical philosophy that reflects the cultural and sensory richness of the Brunello di Montalcino region, leading her to success in the wine world.
