Cava d'Onice Colombaio Brunello di Montalcino 2019 is a red wine with an intense, brilliant ruby hue. On the nose, it presents a profound aroma with hints of ripe plum and blueberry, complemented by mineral and balsamic notes. On the palate, it is exceptionally balanced, boasting a robust body and well-integrated tannins. Its finish is long and persistent, leaving a lasting impression.

About Cava d'Onice Colombaio Brunello di Montalcino
They say that good things come in small packages... So when Simone Nannetti stumbled upon a small vineyard of less than 0.5 hectares of superior quality in the heart of Brunello di Montalcino (Tuscany), he saw a golden opportunity to fulfil his dream of making his own wine. Thus, with a constant quest for a unique identity, Simone, along with his father, not only managed to establish his own project under the name Cava d'Onice, but also succeeded in imparting a distinctive nuance to sangiovese in this region of excellence. A remarkable endeavour that has earned him recognition as one of the rising stars in this prestigious Italian wine region.
From this unique cru called Colombaio comes Cava d'Onice Colombaio Brunello di Montalcino. A red wine made from the star variety sangiovese, sourced from 30-year-old vines on medium-textured soil rich in clay and calcium, situated at 450 metres above sea level. Traditional farming practices are employed, and the harvest is done by hand at the optimal moment of ripeness. In the winery, the grapes are selected, destemmed, and gently pressed, initiating fermentation at a constant temperature in cement tanks for approximately 10 days. The maceration period lasts between 21 to 28 days, and after alcoholic fermentation, malolactic fermentation begins. Subsequently, the wine ages in French oak barrels ranging from 500 to 1500 litres for 3 years, followed by an additional year in the bottle before being released to the market.
With an undeniably unique charm in truly limited quantities, Cava d'Onice Colombaio Brunello di Montalcino is an oenological masterpiece that has caught the attention of wine connoisseurs. A small gem of which only about 2000 bottles are produced, uniquely revealing the character and sophistication of a legendary region.
