About Ktima Tselepos Mantinia
If you have not mastered the art of pairing but want to look good, one recommendation that almost never fails is to combine typical dishes with local varieties. So if you have the opportunity to enjoy Mediterranean cuisine, or more specifically, a Greek dish, it is a very good idea to pair it with the wines that Yiannis Tselepos makes at the Ktima Tselepos family winery in the Peleponese region of southern Greece. A great champion of Greek varieties and known as a great ambassador of the Moschofilero variety, which is native to the area and can hardly be found anywhere else.
The Moschofilero is a pink-skinned grape with a rather spicy flavour and good acidity. Lively and invigorating, Yiannis has been growing and learning from it for more than 40 years now, so he is a great expert. The vineyards are planted in Arcadia, in the Peloponnese, on sandy and clay soil at an altitude of 750 metres above sea level which, with a continental climate, causes a slow and full ripening of the grapes to reach their maximum aromatic potential and maintain all their natural acidity. The vines are cultivated using organic agriculture and the harvest is carried out manually when the grapes reach optimum ripeness. Then, in the winery, the grapes are cold macerated (at 10ºC) for 8 hours and fermentation is carried out with native yeasts. Finally, the wine remains on the lees in stainless steel tanks for a limited period of time.
In short, through respectful vinification, Yiannis has managed to preserve all the aromatic intensity and acidity of this star variety. Something that is perfectly demonstrated in Ktima Tselepos Mantinia, a Mediterranean wine that will create some rich pairings.

Ktima Tselepos Mantinia 2020 is an aromatic white wine with intense fragrances of citrus and floral notes. On the palate it is flavoursome, vibrant and refreshing. A wine with high acidity, a clean mid-palate and a finish with a penetrating aftertaste. |
