Spirits are alcoholic drinks that are made through the distillation, a process which separates water from an alcohol from a liquid previously fermented that generally comes from a cereal, grain or fruit. This is done by taking advantage of the different temperatures of evaporation, 100ºC for water, and 78,3ºC for alcohol. The distillation process results in an alcoholic drink that has an alcohol content over 40%, to which aromas through infusion can be added, as they do with gin for example, or perhaps it is aged in barrels such as whiskey or rum, in order to improve its organoleptic properties.
