About Valdespino Amontillado Tío Diego
Valdespino Amontillado Tío Diego is a generous wine produced by the winery Valdespino in Jerez de la Frontera, D.O.Jerez.
Valdespino is one of the oldest wineries in Jerez. The first member of the Valdespino family who started to cultivate the vines and age the Sherry wines was Mr Alfonso Valdespino, in the 13th century. Currently, Valdespino belongs to Grupo Estévez.
Valdespino is a reference of the ageing of Sherry wines, known for their traditional methods in the production processes of their wines.
All the grapes used to produce the Valdespino cru wines come from the farm Macharnudo Alto, located around 5 km from the north-east of Jerez, at 135 metres above sea level, planted on "albariza" soils, which are typical of the area. The "albariza" are white calcareous soils that retain the water very well.
Valdespino Amontillado Tío Diego is a wine made from Palomino Fino from the renown farm Pago Macharnudo Alto, with vines that are over 25 years old.
The free-run must (mosto yema) ferments in American oak butts, and it remains there with its lees under the yeast cap (velo en flor) for 3 months. Once it is classified and fortified, it is aged for eight years under the cap of yeast (velo en flor). Then it is passed on to "criaderas" and "soleras", where it goes through oxidative ageing for another eight years.
