About Torres Celeste Verdejo
Astrotourism is a new word, registered very recently, which describes a new form of tourism based on travelling to observe and discover the night sky and its stars. This activity is gradually becoming more and more popular... And Decántalo wants to get in on the action! Our particular journey and astronomical tour begins with Torres Celeste Verdejo.
Torres Celeste Verdejo is a white wine from the D.O. Rueda, made by the Torres family in Villafranca del Duero, in the highest part of the northern plateau (in the middle of the Duero plateau). Here, where at nightfall it feels like you can touch the stars (perhaps that is where it gets its name), the Torres family have found a special and magical place, right on the left bank of the river, where the Verdejo reveals its most expressive and intense aromas. Here, where the soils are mixed with gravel and pebbles, the flow of the river becomes wider, creating very favourable conditions for this native variety.
Gentle and respectful winemaking is key to the rest of the Torres Celeste Verdejo process. In the winery, the key is cold maceration, where the grapes and must are in contact for about three hours. After this, fermentation takes place in stainless steel tanks with an extensive temperature control. The yeasts will be immersed in this task for approximately 15 days. Once they finish the process, they will die and become lees that will be in contact with the wine for about two months until it is finally bottled.
The sky and the stars keep secrets. The best wines too. Torres Celeste Verdejo is the key and the way to decipher them all.
