Tasting notes Thymiopoulos Blanc de Rosé 2009
White wine Biodynamic and Natural. 11 meses en depósitos de acero inoxidable y barrica.
Thymiopoulos Blanc de Rosé 2009 is an exceptional white wine that captivates with its unforgettable amber hue. From the outset, its bouquet awakens with intense aromas of citrus marmalade, dried white flowers, and a hint of honeycomb. Earthy notes and spices, along with a whisper of almond and sage, enrich its bouquet. On the palate, it offers a full-bodied and robust experience, where refreshing acidity is harmoniously balanced with a gentle tannic sensation. This wine concludes with a lingering aftertaste, inviting further tastings. A combination of aromatic complexity and a well-defined structure on the palate, offering a memorable delight for the senses.

About Thymiopoulos Blanc de Rosé
There is something magnetic about oddities. The strange, the unexpected, that which doesn't quite fit into any category often exerts an immediate fascination. In the world of wine, these peculiarities are even more alluring: bottles that are difficult to classify, personal stories that defy market logic, forgotten grapes that resurface thanks to the vision (and stubbornness) of a single individual...
Apostolos Thymiopoulos is one such character. A vigneron from northern Greece, in the region of Naoussa, he has been pivotal in the rediscovery and international appreciation of the indigenous grape xinomavro. His story begins far from the vineyards: for years, he ran a wine shop, which afforded him privileged contact with the end consumer.
It was after the loss of his parents that he decided to return to the family estate, to the vineyards on the slopes of Mount Vermio, and channel all he had learned into his own production. He did not do it alone: his constant travels across Europe with his friend and mentor Haridimos Hatzidakis—the great advocate of Assyrtiko in Santorini—connected him with an alternative wine world, populated by organic and biodynamic viticulturists who championed minimal intervention and maximum expression of terroir. From these encounters emerged a clear conviction: wine should be easy to drink, light, vibrant, without sacrificing complexity or character.
One of the most extreme (and at the same time brilliant) examples is his Thymiopoulos Blanc de Rosé, a wine that defies categorisation from its very name. Produced in the region of Fytia with fruit from organic vineyards located at 500 metres altitude, on schist and granite soils, the wine benefits from the area's unique microclimate with strong thermal contrasts that enhance freshness and acidity.
The blend is also unusual: xinomavro with a small contribution of malagouzia. Vines cultivated under biodynamic principles and hand-harvested. From there begins a story of uncommon patience. Initially conceived as a rosé, the wine undergoes a long fermentation process with extended resting on its fine lees. In a subsequent stage, a small portion of the wine is extracted and young must of malagouzia is added, triggering a second natural fermentation. After this second process, 85% of the wine is aged in stainless steel tanks, while the remaining 15% is aged in barrels, adding a layer of complexity without overshadowing the purity of the fruit. Only then, after this entire journey, is it deemed ready to see the light of day.
Thymiopoulos Blanc de Rosé is a matured wine. One that has undergone a long transformation into something entirely unique. And while the story may be overwhelming, what truly matters is not the numbers, but the result. An oddity that, once discovered, remains in the memory forever.
