About Testament The Dalmatian Dog Pošip

You could say that Croatian wines are the great unknowns of Europe at the moment. Against all odds, this country, where the Greeks were already making wine in the 5th century, is beginning to stand out, showing the world how they are gradually overcoming the image of a country where production was in the hands of the state and wine was sold in bulk in taverns. 
 
The perfect example of what we are talking about is a bottle of Testament The Dalmatian Dog Pošip, a rich, structured white wine made by the Testament winery in Dalmatia (one of the four winemaking areas the country is divided into). To be more precise this winery’s vineyards are located in the northern region, in the town of Jadrtovac (very close to the medieval town of Šibenik), where only Pošip and Babić are grown. Both native varieties are organically cultivated and grown on their 47 hectares. The Pošip grape was exclusive to Korčula. It was not known outside of the island; however, now, this grape is one of the must-haves in the Dalmatian area. 
 
The limestone, which creates a rocky, light-coloured landscape known as karst, is key to the ripening of the grapes. This is mainly due to the fact that these light soils reflect light, which affects the grapes, accelerating their ripening. This is reinforced by the climate, which is mainly Mediterranean and dry. 
 
In the winery, Testament The Dalmatian Dog Pošip bears the signature of Igor Radovanović and Nikola Mirošević. The grapes are harvested very early in the morning to ensure that the berries arrive in the best possible condition. When they are received, the bunches are cooled and sorted, going directly to the press (where they will be pressed with minimum force). After vatting in stainless steel tanks, Testament The Dalmatian Dog Pošip ferments for 3-4 weeks at a constant temperature of about 15°C. It will spend two months in this tank on its lees, with constant batonnages (stirring where the lees come into contact with the wine).
