About Tequila Volcán de mi Tierra Blanco
Tequila can be crafted in two distinct manners: by adhering to the traditional method (where the agave is baked in a stone oven, crushed with a stone mill, and fermented in open wooden vats); or, alternatively, by employing a more contemporary technique (involving the use of autoclaves, milling machines, and stainless steel tanks).
In this regard, one method is not superior to the other; however, when these two production techniques converge... perfection is actualized! For us, your wishes are commands, and thus we present Tequila Volcán de mi Tierra Blanco, a tequila that hails directly from the Altos and Valles regions in Jalisco (west of México).
Tequila Volcán de mi Tierra Blanco is named after an actual volcano, the Volcán Tequila, located in the lowlands of Jalisco, which erupted 200,000 years ago. The eruption covered the soils of Valles with basalt and minerals (such as iron), creating an ideal environment for the growth of blue agave, imparting earthy and herbal nuances. Meanwhile, the Altos region (situated further to the west) is known for its clay-rich soil, which contributes fruity and floral notes.
Besides this unique feature, the secret of Tequila Volcán de mi Tierra Blanco lies in its production, a blend of traditional and modern methods. The process begins separately. For the agave from Valles, the traditional method is used, involving the stone oven and the tahona (a large wheel made of volcanic stone that crushes 20% of the cooked agave). Subsequently, the mash is transferred to open wooden vats, where it ferments using natural yeasts. The remaining 80% of the Valles agave is processed through a milling machine and into stainless steel vats. Both liquids, once fermented, are distilled separately twice.
Let us not forget the agave cultivated in Altos (the region located further to the west), where the more modern method is employed, using autoclaves, milling machines, and stainless steel tanks where part of Tequila Volcán de mi Tierra Blanco ferments with rum yeast strains. This batch, like that from Valles, is distilled twice.
Finally, the distillations are blended to create Tequila Volcán de mi Tierra Blanco, a unique and exceptionally special tequila, perfect for savoring and taking one's time to appreciate. Long live México!
