Te Mata Sauvignon Blanc Estate Vineyards is a white wine made on lees at Te Mata Estate in the Hawke’s Bay area (New Zealand) with the white Sauvignon Blanc variety.
One of the oldest wineries in the country, Te Mata Estate dates back to 1854, when the Chambers family, who were English immigrants, settled in Havelock North (North Island, New Zealand) and began to plant vines. The winery, which spreads across 240 hectares, is now considered one of the 10 best wineries in New Zealand.
Te Mata Sauvignon Blanc Estate Vineyards comes from their own vineyards planted in a warm climate and with free draining soils. They use sustainable viticulture like using plants, grasses and sheep to minimise the use of chemical treatments that harm the natural balance of the strain and soil. The harvest is carried out at the optimum point of ripeness.
In the winery, the grapes used to make Te Mata Sauvignon Blanc Estate Vineyards are cooled to preserve their aromatic qualities as much as possible. They are gently pressed and the resulting juice is left in the cold before being transferred to stainless steel tanks. There, alcoholic fermentation takes place at a controlled temperature. Finally, it is filtered and clarified before bottling.
