Nestled within the Eastern Alps in Northern Italy lie the Dolomites, a majestic range of mountain massifs primarily composed of a light-coloured magnesium-rich limestone called dolomite, from which they derive their name. At the base of these rocky formations, specifically in the province of Trento, three generations have been instrumental in the establishment, growth, and evolution of Compañía Agrícola Salvetta, a quaint family-owned winery that was founded by Darío Salvetta in 1930 with the production of the region's famed dessert wine "Vino Santo Trentino", and is now continued by his son Giancarlo and grandson Francesco with the crafting of dry wines that are deeply connected to tradition and nature. Adhering to strictly organic farming practices from the outset (certified since 2012), they present us with a selection of natural, authentic, and distinctive wines that splendidly capture the essence of the IGT Vigneti Delle Dolomiti.
With ancestral expertise and a deep respect for the environment, the Salvetta Vigneti Delle Dolomiti Nosiola Non Filtrato is born, a natural red wine made from nosiola, an ancient indigenous grape variety of Trentino that thrives in the Sarca Valley's ideal conditions. These late-ripening vines are planted in dry, calcareous soils and are cultivated using 100% organic farming methods. In the winery, the grapes undergo gentle pressing, allowing the skins to remain in contact with the juice to extract the primary aromas of the varietal. Fermentation takes place in acacia barrels, after which the wine is transferred to stainless steel tanks where it rests on its lees for six months. Finally, it is bottled unfiltered.
