Montse and Francesc are a couple who have remained faithful to the philosophy of a family business with over 100 years of winemaking history, but bringing the generational change needed to adapt to a new era. Their cavas, made according to the principles of the D.O. Cava in their cellar in the town of Guardiola de Font-Rubí (Catalonia), are a reflection of a family identity that has been passed down from generation to generation.
Rexach Baqués Gran Reserva Brut Nature, the house’s leading product, is a sparkling wine made with the traditional Macabeo, Parellada and Xarel·lo varieties from their own vineyards in the Font-Rubí area. In the winery, after selecting and destemming the grapes, the base wine is made through alcoholic fermentation at a controlled temperature in stainless steel tanks. The wine then undergoes a second fermentation in the bottle and stays in the cellar for around 54 months before being released for sale. Disgorging is carried out manually and by hand, with no added sugars. The result is a very versatile cava that opens up a whole world of pairing possibilities.
