About Albor de Resalte
The dawn drives away the darkness of the night. In poetic or literary terms, it evokes the beauty and tranquility of that time of day just before sunrise. That time when the sky begins to light up, but the sun has not yet fully risen. This is a time when temperatures are usually lower, which is good for vine growth. On the one hand, cool temperatures help to maintain a proper balance as the grapes develop and, at the same time, avoid temperature stress. The Resalte winery lies in Peñafiel, Valladolid, and was set up in 2000. They make wines in the DO. Ribera del Duero, and they are aware of the power of nature, counting on the sunrise to get all of its benefits in a place with a continental climate and a huge temperature variation between day and night. So much so that they have even named one of their wines Albor de Resalte. A statement of intent, without doubt.
To make Albor de Resalte, they select the Albillo Mayor variety vine by vine from vineyards that are interspersed with old Tempranillo vines. These are old vines planted on limestone soil that they cultivate respectfully, minimising sanitary treatments and benefiting from the temperature contrasts, with very cold nights and very warm days. The grapes are harvested by hand in 15 kg boxes and, once they reach the winery, they are cooled for 24 hours to 5ºC. The best bunches are then selected and, after destemming, the grapes are cold macerated with the skins and carefully pressed. The resulting must is fermented in new 500-litre French oak barrels and finally the wine ages between 500-litre French oak barrels and a concrete tank for 12 months.
The result is Albor de Resalte, a white wine for aging made from Albillo Mayor, the Ribera del Duero’s historic white variety. Thanks to Resalte’s excellence in winemaking, this is a brilliant wine that been brought back from near extinction.
