La Grande Récolte (the great harvest) by Pierre Paillard is a vintage couvée made from a coupage of the Chardonnay and Pinot Noir varieties from the Grand Cru Bouzy plots. It ages for ten years in the winery’s cool and calcareous cellars, which gives it time to fully develop its aromas and balance. This is a product of one of the best vintages of recent decades.

On the palate it is tense, with very fine and well integrated bubbles and plenty of freshness. The finish is striking, long and elegant, with a slight iodine aftertaste.
