Parxet Brut Nature is a sparkling wine made by Parxet with the Macabeo, Parellada and Pansa Blanca varieties in Alella under the D.O. Cava (Catalonia).
Parxet is a winery with a long family winemaking tradition which has been passed down from generation to generation since the 18th century. Just 20 km from Barcelona in the town of Tiana, its name comes from the French term "parchet" which means small plot of vineyard and its wines are made mainly with Pansa Blanca, a variety which comes from the Xarel-lo family of the Penedés.
Parxet Brut Nature comes from smallholding vineyards with soils composed of sauló, a granitic rock which absorbs water very well, and with a mainly Mediterranean climate. Traditional agriculture is practiced and the harvest is carried out manually with selection in the vineyard itself.
Parxet Brut Nature is made from a manual harvest, followed by pressing the whole grapes and fermentation at a low temperature, which allows the base wines required in order to blend them properly to be obtained. Tirage and ageing are carried out in the Tiana cellars for a minimum of 24 months. It’s marketed without adding any kind of sugar, so a complete Brut Nature is obtained, with zero grams of sugar.
Parxet Brut Nature is a Cava made with the traditional champenoise method but with the personality provided by the Pansa Blanca typical of the D.O. Alella.
