About Nicolas Carmarans Josette

A Nicolas Carmarans the challenges are thrilling. Even though nowadays natural wines are in vogue, opening a minimal intervention wine shop in 1994 was a highly risky venture. In his charming café, Nouvelle Mairie, in the 5th arrondissement of Paris, he not only becomes one of the pioneering advocates of natural wine but also develops a keen interest in producing his own wines. Thus, in 2002 he decides to break away from the city and relocates to his native region of Aveyron, in Occitania, to establish his own project. A collection of natural wines crafted from local varieties that authentically reflect the terroir and exhibit a most original character.

His wine, Nicolas Carmarans Josette, is a red named after Nico's mother, made from the local grape fer servadou. These old vines, aged between 30 and 60 years, are planted in granitic soil at approximately 450 meters above sea level. The vineyard is managed organically and biodynamically, and the harvest is done manually at the optimal point of ripeness. In the winery, the selected grapes undergo carbonic maceration to enhance freshness and fruitiness. Finally, the wine is bottled without fining or filtration.

Offering an interesting alternative to traditional winemaking methods, Nicolas Carmarans Josette is a natural wine that showcases Nico's passion for minimal intervention and his roots. A juicy red brimming with fruit and freshness, paying homage to his mother.
