About Lustau VORS Amontillado
Lustau VORS Amontillado is a wine produced by Bodegas Lustau located in Jeréz de la Frontera, D.O. Jerez-Xerés -Sherry.
Bodegas Lustau , founded by José Ruiz-Berdejo i Veyan in 1896, has evolved from its beginnings as a stock keeper. Nowadays, they have 3 wineries in the different cities of the Sherry Triangle, Jeréz de la Frontera, Puerto de Santa María and Sanlúcar de Barrameda.
Bodegas Lustau has two vineyards in the Sherry Triangle, Viña Montegilillo, with white clay soils (albariza), very appropriate for the cultivation of Palomino. From this variety they obtains the musts for the production of manzanilla, fino, amontillado and oloroso wines. And Viña Las Cruces, near the coast, with sandy soils where they cultivate Muscatel and Pedro Ximénez, which they use for the production of sweet wines.
Bodegas Lustau makes a range of VORS (Very Old Rare Sherry), sherry wines that are qualified and certified by the Sherry Wine Regulatory Board, which guarantees that they have aged for at least 30 years. They are subjected to a strict selection that gives rise to only one thousand bottles of 50 centilitres each.
Lustau VORS Amontillado is a wine made from Palomino Fino. Selecting the oldest "soleras", of over 30 years, combining the ageing under the yeast cap (velo en flor) with a subsequent period where the yeast cap disappears and the wine is exposed to oxidation.
