About Le Paradou Côtes de Provence Rosé
As is well known, Provence is a land of great rosés. In the past, red and white wines were produced throughout the region. However, these wines, although also very interesting, have now been superseded by rosés.
Now there is a very wide range here, a whole world of varying qualities: from the most basic rosés (but not necessarily of lower quality), to the best, like Le Paradou Côtes de Provence Rosé, a first press wine that is now the pride of Le Paradou.
This winery, lying one hour from Marseille, produces this rosé coupage of Cinsault, Garnacha Tinta and Vermentino. Obviously these are all locally grown grapes; however, on this occasion, their main unique feature is that they grow under the microclimate of the legendary Sainte-Victoire mountain, west of Aix-en-Provence. Beneath this massif, at an altitude of 1,000 metres, lies a wide plain of vineyards that grow in a Mediterranean climate, with hot summers, cool winters and mild springs and autumns. The soil, limestone with red clay, gives the wine a unique minerality and freshness.
The grapes are harvested very early in the morning to guarantee the good condition of Le Paradou Côtes de Provence Rosé. The bunches arrive at the winery, where the grapes are cooled before being pressed at low pressure. Only the juices from the first pressing are used, placing them in stainless steel tanks for fermentation. This process, which lasts several days, is carried out at a temperature between 14°C and 15°C. Finally, following clarification, Le Paradou Côtes de Provence Rosé is bottled, ensuring that it retains its good acidity and characteristic freshness.
Le Paradou Côtes de Provence Rosé 2020 is made in a very special place that served as an inspiration for artists like Pablo Picasso (where he set up his studio and asked to be buried).
