About Le Batossay GRGR
They say you make a path by walking it. And he started out in 2012, when he took over the 4.5 hectares given to him by his father, Olivier Cousin. Today Baptiste Cousin’s steps have led him to set up his own project, Le Batossay, where he makes natural wines.
His base of operations has continued to be in Matinee Briand, the village located in Anjou (in the Loire Valley in the southwest of France) where he learned everything from his grandfather and his father. Today, as the fourth generation of this family, and alongside his wife Gael, Baptiste Cousin is based at the Château de Boisairault, where they have been working on their wines since 2020. Outside, in the vineyard, they continue to focus on fully biodynamic crops planted on soils rich in quartz, shale, marl, clay and limestone. These are old vines that have never been treated with chemicals. Baptiste Olivier knows this well, as he has the assurance of his family, guardians of these vineyards for centuries. The work on this plot is entirely manual, always using an animal to plough (the family’s horses). The rest of the year, out of season, sheep and goats roam freely among the vines, eating the weeds and fertilising the soil.
Le Batossay GRGR is an acronym for the grape used, the Groulleau Gris, which is so typical of this area. There is often a dilemma surrounding this grape: many love it and others pull it straight out. Baptiste Cousin is in the former camp, championing this grape that has traditionally been to make rosés, and which he surprises us with in his blanc de noir: Le Batossay GRGR. Le Batossay GRGR is harvested by hand and pressed in 3,000-litre conical oak vats, where the must ferments directly, spontaneously, and using native yeasts. From here, Le Batossay GRGR is transferred to fibreglass tanks where it will also undergo malolactic fermentation. Two more rackings in May, and no filtration or clarifying, are the finishing touches for Le Batossay GRGR before bottling.
As the phrase on its label says, “Only dead fish swim with the current”. It is clear that Baptiste Cousin and his Le Batossay GRGR do not go with the flow, or anything we have known until now.
