Las Pedreras Arquitón 2023 is a pale pink rosé wine that stands out for its elegance and maturity. About Las Pedreras Arquitón

In 2016, Guzmán Sánchez was crafting wine for La Querencia, his restaurant, "one of the finest places to dine and drink in Gredos." This hobby, utilising his father's ancient vineyards, eventually transformed into Las Pedreras, a far more ambitious venture in which he is joined by his partner, Bárbara Requejo, an oenologist who has taken the reins of this new enterprise. From this endeavour emerges Las Pedreras Arquitón.
 
Las Pedreras Arquitón is a rosé cultivated between San Juan de la Nava and Navatalgordo, very near Villanueva del Ávila, in Castilla y León. Here, in the Alto Alberche valley, they cultivate small hectares of vineyards. From these, intriguing wines are born, joining a range that is propelling the name of the Sierra de Gredos to great heights. However, this is no easy feat as the vines grow in the coldest and highest part of the mountain chain, at approximately 900 metres above sea level, under a mountainous, cold, and humid climate with abundant precipitation (some even in the form of snow). Despite these challenges, both Guzmán and Bárbara have opted for minimal intervention, merely waiting for the clusters to reach their optimal ripeness.
 
After the harvest, Las Pedreras Arquitón is directly pressed and allowed to settle in the cold. This process, always conducted in the cold, aims to obtain a clear must. This is achieved by allowing the wine to rest for 24 to 48 hours until the suspended particles fall to the bottom. Once this is accomplished, Las Pedreras Arquitón is racked directly into oak barrels where it will undergo spontaneous fermentation with indigenous yeasts. In these very vessels, malolactic fermentation and maturation will also occur, where Las Pedreras Arquitón will rest for around six months.
