About Dominio do Bibei Lalama
Dominio do Bibei Lalama is a red wine from the D.O. Ribeira Sacra crafted by the winery Dominio de Bibei.
Dominio do Bibei Lalama is a blend dominated by the Mencía grape variety (90%) complemented by smaller proportions of Brancellao, Mouratón, Souson, and Garnacha (10%).
The grapes used to produce this wine come from vineyards aged between 15 and 100 years, situated at altitudes ranging from 300 to 700 meters above sea level, featuring diverse soil types, including slate, clay, or granite.
The harvest is carried out manually in small 10 kg boxes. Each variety is picked separately. An initial selection of clusters is made in the vineyard, followed by a second upon arrival at the winery. The grapes are then destemmed and individually berry selected.
A maceration period of 2 days is carried out before initiating fermentation in open 500-liter French oak barrels and conical wooden vats. Manual punch-downs are employed, and the wine is racked by hand. The subsequent malolactic fermentation takes place in 300-liter barrels.
Lalama undergoes an extensive aging process in French oak barrels of various uses, French oak conical vats, and is finished with several more months in the bottle.
Lalama is not filtered, so solid residues may be present.
