La Bota de Manzanilla Pasada Capataz Cabo 110 is a Palomino variety fortified wine produced by the Equipo Navazos in the D.O. Manzanilla - Sanlúcar de Barrameda.
Equipo Navazos is made up of a group of fortified wine lovers who have been searching for treasures among traditional Andalusian wines since 2005 under the label “la bota”. To do this, prestigious winemakers from Jerez de la Frontera, Sanlúcar de Barrameda, Montilla and El Puerto de Santa María have opened their best soleras and casks to join in with this limited edition, artisan project.
La Bota de Manzanilla Pasada Capataz Cabo 110 comes from a solera of the most excellent 15 casks. For a whole decade, it has been run by Capataz Cabo, a sherry maker who knows better than anyone how to apply the traditional methods used by the Marco de Jerez wineries, which has given the product an even more marked biological character (intense and saline notes on the palate) by filling the casks to a higher level than usual (so that you could almost touch the wine if you put your finger into the cask). That way, yeasts which have become weak over time, continue to act as a barrier between the wine and the oxidative effect of the air. But also the limited flor cannot prevent the occasional oxidative note or the alcoholic strength going above 16%. Its average age is 14 years.
