About Kolonne Null Blanc Edition Pauly

“Tell me who you spend time with and I'll tell you who you are.” Never has a saying been so true, has it? And this seems to be clear to Kolonne Null, where they are quick to partner with the best to produce and launch their alcohol-free wines. This time it is the turn of winemaker Axel Pauly with whom the winery is launching Kolonne Null Blanc Edition Pauly.

On this occasion, the owner, Philipp Rößle, did not have to go far to find the Riesling used to make this alcohol-free white wine. Here, in the Mosel region (western Germany), the team has worked in “close collaboration” to create this wine where only the best grapes are used. The fact that it is alcohol-free is not incompatible with quality, because they always look for the best vintages and the best clusters. Only by starting from a good place can you achieve good results.

Production of Kolonne Null Blanc Edition Pauly is based on thermal vacuum distillation, where the alcohol is gently removed at a low temperature of 30°C, keeping the rest of the wine’s qualities intact. Once the alcohol has been removed, and all the original structure of the wine has been maintained, it is time to recover all the natural aromas and sugars lost during the process (the latter are recovered by adding natural sugar).

The main objective of Kolonne Null was to create elegant wines that are an experience, and that can be enjoyed to the fullest; and with Kolonne Null Blanc Edition Pauly they have achieved exactly that. Good. And it is the same with all the other wines in their range. Don’t miss out on any of them!
