Characteristics Justinos Medium Rich 3 years
Justino’s Madeira’s many years of experience has earned it an international reputation. Although the winery became a public limited company in 1953, Justino Henriques’ family has been making Madeira wines since 1870. It is currently one of the oldest producers and exporters and with one of the largest stocks. This has seen the company become a leading example on this Portuguese island.
Justinos Medium Rich 3 years comes from vineyards planted in volcanic soil, in a mild climate and cultivated using traditional agriculture where the vines are trained using the Latada system on terraces. This training system comprises a horizontal wire structure supported by wooden or iron posts. Since the vines lie on steep slopes, it is almost impossible to work with machinery, so the harvest is carried out manually over several weeks, selecting the grapes by ripeness.
When all the Justinos Medium Rich 3 years grapes reach the winery, they are destemmed and pressed to begin macerating with their skins. The must is then placed in stainless steel tanks and fermentation begins at a controlled temperature. Fermentation is stopped after 4 or 5 days by adding a 96% grape spirit. It is kept in the same place for 3 months at a temperature of 45 to 50°C. Finally the wines age in oak barrels and/or are mixed with wines that have been aged for at least 3 years.
The youngest wine in the collection, Justinos Medium Rich 3 years offers the sweetness and structure of Madeira fortified wines.
