About José Pariente Verdejo
Rooted in the winemaking tradition, it is far more than a cultivation technique; it is a genuine act of love and respect for the land, for the past generations who have tended the vines, and for the knowledge passed down from parents to children. It is the essence that breathes life into authentic wines, those that are not only enjoyed but also tell stories. A clear example of this legacy is José Pariente, a winery that, since its inception, has managed to uphold the same passion for viticulture as its founders. In the heart of Rueda, in Valladolid, the Pariente family continues to cultivate vineyards with a devotion evident in every bottle.
The production of one of its most emblematic wines, José Pariente Verdejo, begins in vineyards over 30 years old, planted in poor gravelly soils along the banks of the Duero River. Here, the continental climate, as harsh as it is unpredictable, imparts a unique character to each grape cluster. The nocturnal harvest, a technique that takes advantage of the low temperatures to preserve freshness and aromas, marks the beginning of the process. After cold maceration and gentle pressing, the must is fermented at low temperature, preserving the purity of the verdejo variety. The final touch, keeping the wine on its lees until clarification, imparts that body and character that makes it unmistakable.
