Jean Lallement’s great treasure is this 5.5 hectare estate lying between Verzenay and Verzy in the Montagne de Reims. Although this winery is very small in comparison to its larger neighbours, it has absolutely nothing to envy. His terroirs, his great jewels, are considered to be some of the best vineyards for the production of Pinot Noir base wine. With a high quality raw material and a lot of hard work, he produces complex, distinctive and delicious champagnes.
These wonderful vineyards are where Jean Lallement Brut Rose comes from. Divided into different plots, the vines have an average age of 30 years old and are planted on extremely chalky soils. They are cultivated using traditional agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
In the winery, Jean Lallement Brut Rose is firstly vinified with native yeasts and aged in 205-litre oak barrels. Once the base wine has been made, it undergoes a second fermentation in the bottle and is aged for 48 months on lees with a dosage of between 3 and 6 gr/l of sugar.
What was originally made for private consumption, Jean Lallement Brut Rose is now one of the most sought-after and rare Lallemnet wines. A brut rosé champagne with no more than 1,800 bottles made and the delight of top connoisseurs.
