An example of this diversity is Gorka Izagirre Arima Vendimia Tardía, a sweet wine made from hondarrabi zerratia grapes from the vineyards the winery owns in the Bizkaian town of Larrabetzu. Vines planted in 2004 are traditionally cultivated and harvested with the grapes overripe on the plant. Once in the winery, fermentation takes place in new French oak barrels where it remains for 6 months. Finally, the wine is bottled and does not hit the market until after 6 months of resting.
