When referring to sparkling beverages in Portugal, a plethora of choices are at one's disposal. Yet, among the most esteemed is the effervescent wine known as "Vinho Espumante". The region of Bairrada, nestled in the heart of Portugal, boasts a profound mastery in crafting this wine via the traditional champenoise method. It is here we encounter the delightful couple, Filipa Pato and William Wouters, who produce wines without pretense and indeed, are also adept in the art of sparkling wine creation.

She, a viticulturist, and he, a sommelier, combine their expertise to forge authentic wines utilizing indigenous grape varieties and adhering to the most time-honored techniques. From their winery, situated in Óis do Bairro, Beiras, emerge wines like Filipa Pato & William Wouters 3B Blanc de Blancs, a sparkling wine crafted exclusively from white grape varieties such as maria gomes, bical, and cercial. Vines planted on clay-limestone slopes that, through biodynamic farming, perfectly express the character of a region with a strong Atlantic influence. The grapes are harvested by hand and, upon arrival at the winery, only the finest are selected for gentle pressing. The juice thus extracted ferments with indigenous yeasts in temperature-controlled stainless steel tanks. Subsequently, the secondary fermentation occurs in the bottle and it is left to rest on the lees for 9 months without the addition of any dosage.
