About Fabio Coullet Ingénito

Being born with an innate ability or a natural talent is incredibly valuable, and it is advantageous to harness it to its fullest potential. Such skills can provide a significant edge in any field or profession, including viticulture. Harnessing these inherent talents not only enhances one's enjoyment of their work but also propels them to achieve a higher standard of excellence in their performance. Fabio Coullet is a born viticulturist, which is not to say that he hasn't enriched his life with ample learning and experience to accomplish his celebrated eponymous project. His winery is nestled in the Axarquía, a distinctive region situated to the east of Málaga, in Andalusia, surrounded by steeply sloped mountains, where he crafts high-quality, minimal intervention wines brimming with Mediterranean nuances.   

From this inherent passion emerges Fabio Coullet Ingénito, a monovarietal Garnacha wine born from the rugged slate terrains perched at an altitude of 300-450 meters above sea level with a gradient of 70%. Heroic viticulture is practised here, the vineyards are cultivated organically though without ecological certification, and the harvest is done manually at the optimal point of ripeness. In the winery, the grapes are meticulously selected by bunch and undergo maceration with skins and 30% of the stems. Subsequently, spontaneous fermentation with indigenous yeasts occurs in 1000-liter vats over 8 to 10 days. The malolactic fermentation then unfolds in 225-liter oak barrels, followed by at least 4 months of aging in the same vessels.

A reflection of his approach to the land and wine, this audacious viticulturist presents us with Fabio Coullet Ingénito, a red wine that springs from the heart of the magical and rugged Axarquía, aiming to reveal itself as it truly is, without any pretense or artifice.

Fabio Coullet Ingénito 2021 is an elegant red wine that enchants with a raspberry red hue of light depth, exuding clarity and luminosity in its visual presentation. Its bouquet conjures a delightful fruitiness, dominated by red berries, in harmony with gentle hints of garrigue, delicate florals, and a subtle balsamic undertone. On the palate, its vivacity unveils citrusy accents alongside a pleasing bitterness and silky tannins, rounded off by an earthy and mineral nuance.
