To begin with, he rejects the traditional method and eliminates any use of chemical products that could damage the natural balance of the terroir. On the contrary, he embraces the ancestral techniques that his grandfather had already used, not only to sell organic grapes to the most prestigious vignerons in the area, but also to embark on the adventure of making his own wines.
Emilien Feneuil Les Puits Rosé de Maceration is a sparkling rosé from a vineyard located in the village of Ecueil under the name "Les Puits". Pinot noir vines with an average age of 40 years are planted on sandy-clay soil with limestone bedrock underneath. The grapes are grown organically with biodynamic treatments and harvested by hand at the optimum moment of ripening. Then in the cellar, the grapes macerate for 24 hours and fermentation is spontaneous with native yeasts in 228-litre used Burgundy barrels and 400-litre Côte de Beaune barrels (5–6 years). Once the wine is made, it undergoes a second fermentation in the bottle where it remains on the lees for 48 months before disgorgement "à la volée".
