About El Serbal Paraje la Santa
J.K. Rowling penned the initial chapters of Harry Potter in Edinburgh cafés, surrounded by cold cups and grand dreams. She lived on welfare, and her manuscript was rejected by a dozen publishers before someone believed in her story. Today, her books are read in every corner of the globe. Her success was not a matter of luck, but of perseverance, of that quiet determination that drives one to continue when nothing seems easy.
A similar journey befell Adrián Alonso, a young agri-food engineer from Burgos who, after studying Oenology and Viticulture at the Polytechnic University of Madrid, decided to return to his homeland, Arlanza, in Burgos (Castilla y León) to create his own venture.
Indeed, El Serbal was born with more enthusiasm than means. He had no winery of his own, nor machinery. Just some ancient vineyards, countless hours of labour, and the conviction that Arlanza held potential waiting to be rediscovered. Reviving forgotten vineyards, producing without resources, learning through trial and error… these were his early chapters.
Yet, as in every compelling tale, perseverance bears fruit. Over time, Adrián has managed to establish his own production facility, acquire machinery, see his wines recognised by critics and influencers, and secure a place in prestigious distributors.
It is, without doubt, a success.
And his wine, El Serbal Paraje La Santa, is a testament to that hard-won maturity. It originates from old bush vines in dry-farmed conditions, planted on a northeast-facing slope at an altitude of 990 metres, surrounded by forests of pines, holm oaks, and rowans—the magical tree that lends its name to the project.
The soils, sandy-loam and calcareous at depth, compel the roots to struggle, and that struggle translates into character. The tempranillo, garnacha, and other white grape varieties are partially destemmed, a portion is foot-trodden, and malolactic fermentation takes place in used 600-litre barrels, where the wine then ages for 13 months. Finally, it is bottled without fining or filtering, preserving its full authenticity.
El Serbal Paraje La Santa is a wine of depth, honesty, and soul. Because, ultimately, as with any good venture, great stories often begin the same way: with someone who refuses to give up.
