Maestro Sierra Amontillado 12 Años is a very dry fortified wine from Jerez. The nose offers exquisite complexity with notes of yeast, floral nuances and dried almonds. About El Maestro Sierra Amontillado 12 Años

An Amontillado is one of the most peculiar fortified wines in oenology. It is made through the fusion of two types of aging: biological and oxidative.
 
Biological aging is one of the characteristics that sets apart the fortified wines of Jerez. It occurs under a yeast cap known as the veil of flor, which grows spontaneously in each barrel and protects the wine from oxidation, giving it very particular organoleptic characteristics.
 
Maestro Sierra Amontillado 12 Años spends the first six years of its life under this type of aging, which accentuates its dry palate and gives it sharp notes. After these first six years, the wines with the best qualities are selected and fortified until they reach 17% alcohol, which weakens the yeast cap and the second part of the aging process, the oxidative one, begins.
 
Without the yeast cap, the wine is no longer protected and contact with oxygen (oxidative aging) is inevitable. It begins to lose its pale colour, becoming darker, more concentrated and acquiring nuances that, together with those of its aging under a cap, result in an extraordinarily complex and interesting wine.
 
Directed by Pilar Pla Pechovierto, from when she was widowed in 1976 until her death in 2020 at the age of 99, El Maestro Sierra is an institution in the production of traditional wines in the Marco de Jerez and preserves the philosophy that “La Dama del Sherry”, as Pilar Pla was known, bequeathed through her daughter María del Carmen Borrego. Tradition and elegance that we can enjoy through their fortified wines, a cultural and gastronomic heritage for eternity.
