Tasting notes DYC 12 Años

DYC 12 Años is a single malt whisky with an intense amber hue, bright and warm, reminiscent of a winter afternoon in the mountains. On the nose, it reveals notes of Oloroso, a slightly smoky touch, and hints of dark chocolate and candied fruit. On the palate, it is rounded and smooth, with sweet fruit, cinnamon, and nutmeg, enveloped in the elegance imparted by Pedro Ximénez casks. The finish is fortified, sweet, and lingering, leaving a sensation of a long and thoroughly enjoyed after-dinner experience.

What if you were told that one of the world's award-winning whiskies did not originate in Scotland, but just a few kilometres from Segovia, in Spain?
 
Over 70 years ago, Nicomedes García returned from his travels through Scottish lands with a clear obsession: to prove that Spain could also create a high-quality whisky with tradition, rigour, and character. Thus, almost like a bottled declaration of national pride, DYC was born.
 
The distillery was established in Palazuelos de Eresma, at the historic Molino del Arco, a 15th-century mansion embraced by the Eresma River and sheltered by the Sierra de Guadarrama, in Segovia. There, at over 1,000 metres above sea level, the extreme climate of hot summers and cold winters imparts character to every drop. Moreover, DYC boasts something rare: one of the few distilleries in the world where the entire process occurs in a single location, from its own malting to distillation and ageing, controlling every detail with almost artisanal precision.
 
DYC 12 Años is the most elegant reflection of that legacy: a 12-year-old single malt whisky aged in American white oak ex-bourbon casks and finished in Pedro Ximénez and Oloroso casks, which add depth, smoothness, and an irresistible nod to Spanish tradition. The result is a balanced, refined whisky with an aromatic richness that combines the nobility of the malt with the warmth of sherry, as if Castile and Andalusia were embracing.
 
In the glass, DYC 12 is enjoyed like a long after-dinner conversation, with golden light streaming through the window and that feeling that time, at last, is on your side. Ideal for accompanying dark chocolate, toasted nuts, or a fine cigar, it is a whisky that doesn't need to boast: its history, origin, and patience speak for it.
