About Dominio del Soto Albillo
An Olympic athlete must devote time and effort to perfect their skills and achieve success. A pursuit of excellence to attain outstanding results. Thus, when Mathilde Chapoutier, 8th generation of the esteemed Rhône house and former member of the French Olympic archery team, fell in love with an estate nestled in the heart of Ribera del Duero (Spain), she applied all her sensory and technical prowess to hit the bullseye in crafting high-quality wines. A select portfolio of organic wines that showcase the best of the terroir and the finest of the varietal.
In the case of Dominio del Soto Albillo, it is a single-varietal wine made from the white albillo real grape, sourced from 40-year-old vines planted on clay-limestone soils. Organic practices along with biodynamic treatments are employed to preserve the natural balance of the soil, and once the grapes reach their optimal ripeness, they are hand-harvested in boxes. In the winery, a direct pressing of whole grapes is performed, and the resulting juice ferments with indigenous yeasts in stainless steel tanks (70%) and in demi-muids (30%). Subsequently, the wine matures for 12 months on lees.
Aware that in winemaking, as in Olympic competitions, the path is not always strewn with roses, Dominio del Soto Albillo is born from a blend of inherited technical skills, a precise mental approach, and a passion for craftsmanship. All the essentials to uphold the French tradition of excellence in Ribera del Duero.

Dominio del Soto Albillo 2020 is a luscious white wine exuding ripe white fruit aromas, citrus undertones, and hints of smokiness and butter. On the palate, it is opulent, full-bodied, and exhibits a mineral complexity. This wine boasts an impressive structure, a delightful mouthfeel, and a lingering smoky finish. |
