About Domaine de Pallus Les Pensées de Pallus
Domaine de Pallus Les Pensées de Pallus is a monovarietal Cabernet Franc red wine from the AOC Chinon produced by Domaine de Pallus.
Domaine de Pallus is a winery in the Loire area founded in 1889. It has always been owned by the same family and is currently run by Bertrand Sourdais, who worked more than a decade in the Spanish winery Dominio de Atauta before returning to his native Chinon in 2003. He works his vineyards biodynamically and has a great respect for nature.
Domaine de Pallus Les Pensées de Pallus comes from vineyards that are over 35 years old. They have very low yields, about 28 hectolitres per hectare, and produce an intense and concentrated grape. Their soils are of sand and pebbles on a calcareous rock formation.
Domaine de Pallus Les Pensées de Pallus macerates with the grape skins for 12 days. During the fermentation, daily 20-minute pump-overs are performed to extract and aerate the wine, and finally, once vinified, it is aged for 12 months in 3 or 4 wine French oak barrels before ending up spending 6 more months in cement vats.
Domaine de Pallus Les Pensées de Pallus is a deep and complex wine, an expression of the terroir it comes from and of its preparation.
2015 | On the nose, the Domaine de Pallus Les Pensées de Pallus 2015, reveals red berries, raspberries, plums and hints of toasted and smoked elements. On the palate it is elegant, silky and refined. Red raspberry comes back to us, and a little roasted pepper, walnut oil and spices also appear. |
