About Domaine Bonnardot Clos Botaveau
Ludovic, Emilien and Antoine are three brothers who take their legacy seriously. As children of the talented Elisabeth – descendant of a long line of winegrowers from the Côte d'Or (Burgundy) dating back to 1470, who redirected the family project towards organic farming and natural wine-making – each of them brings their passion and knowledge to maintain and enhance all the work done so far at Domaine Bonnardot. With the main objective of fully demonstrating the influence of the terroir, they offer a wonderful selection of wines representing the different terroirs of this area of Burgundy at very reasonable prices.
Among the range of wines available for purchase, Domaine Bonnardot Clos Botaveau surprises us with its great originality. An orange wine made exclusively from the white chardonnay variety from 10-year-old vines from a plot of clay-limestone soil located in the middle of the hillside below the Abbaye de Morgeot, in a place called ‘Les Grandes Terres.’ In keeping with biodynamics, there are other vines and small family orchards around the plot with different varieties of trees, and the team only uses fungicides approved for organic viticulture. When the grape reaches optimum ripeness, it is harvested by hand in boxes and transferred to the cellar. The grapes are destemmed and macerated for 30 days. Fermentation takes place spontaneously at a controlled temperature with native yeasts and no added enzymes. The wine is then aged for 20 months, one third in amphorae and two thirds in 500 L medium oak barrels. Finally, it is bottled without clarifying or filtering.
