Cueva Brutal Ancestral 2023 boasts a fresh and crisp profile, with a subtle sweetness that makes it highly enjoyable. About Cueva Brutal Ancestral
Grapes and nothing but grapes... With this philosophy as the central axis, Mariano Taberner breathes life into Bodega Cuevas, his personal venture located in the heart of DO Utiel-Requena, in Valencia, Spain. Wines crafted naturally and artisanally, vinified in a unique 18th-century structure surrounded by century-old vines. With over 15 years of winemaking experience, he showcases his creative prowess with fresh, original, and lively wines. These creations are part of the Asociación de Productores de Vinos Naturales de España, PVN, extracting almost magically the essence of the Mediterranean and transforming it into wine.
Embracing indigenous varieties and ancestral methods, Mariano presents a remarkable collection of the most original references. One of them, Cueva Brutal Ancestral, is a pét-nat crafted through the ancestral method using moscatel and macabeo varieties. Old vines planted on clay-limestone soils at altitudes of 650-700 metres and cultivated according to ecological principles. After being hand-harvested, the wine is made naturally and artisanally. In the winery, a direct pressing is carried out, and the obtained must ferments with native yeasts in stainless steel tanks. Before the fermentation is complete, it is bottled and left on lees for a minimum of 4 months.
Cueva Brutal Ancestral captures the essence of the Mediterranean in every bubble, offering a vibrant, fresh, and characterful experience. A further testament that when one works with respect for the land and passion for the craft, the result is much more than a wine: it is a genuine expression of the terroir and the vision of its creator.
