About COS Cerasuolo di Vittoria Classico
Young people often have a fresh perspective and an idealistic attitude towards the future, which can be a significant source of innovation. Their energy, enthusiasm and passion can drive positive change. In the wine world, specifically in Sicily (Italy), a research and recovery movement is beginning to showcase the most natural expression of wine. It is under this influence that three friends, Giambattista Cilia, Giusto Occhipinti and Cirino Strano bring together their passion and efforts under the acronym COS and, following the principles of biodynamic viticulture and the use of terracotta amphorae, they have managed to produce fresh, vibrant and elegant wines, totally contrary to what you might find at first glance from the powerful sun that radiates in southern Italy.
With the aim of fully expressing the character of the soils where the vineyards grow, we find this COS Cerasuolo di Vittoria Classico, a red wine made with the Frapatto and Nero d'Avola varieties from clay-limestone soils. They are cultivated using biodynamics with integrated and environmentally friendly treatments. Following a manual harvest, the grapes undergo a minimal intervention vinification in the winery where they ferment spontaneously with native yeasts in cement tanks. The wine is then aged in Slavonian oak barrels for 12 months and finally refined for a few more months in the bottle before release.
A pioneering winery when it comes to the production of wine in terracotta amphorae, a container that preserves the fruit and does not add any external flavour, their wines like COS Cerasuolo di Vittoria Classico showcase the unique style of this young and daring project with Sicilian body and soul. A journey of discovery!
2020 | COS Cerasuolo di Vittoria Classico 2020 is a smooth red wine with aromas of red fruits, floral notes and hints of peony. On the palate it is meaty, sweet and very mature. A medium-bodied wine with a slightly tannic entrance, a velvety and supple mid-palate and a long and pleasant finish. |
